Ingredients (serves 4)
- 1 Tablsp Sunflower Oil
- 1 Onion (peeled and chopped)
- 12 Mushrooms (wiped and sliced)
- 1 Pepper (washed, de-seeded and chopped)
- 1 x 400g Tin of Chopped Tomatoes or Passata
- 2 x 125g Tins of Mackerel Fillets in Tomato Sauce
- 200g Pasta (cooked as per manufacturer’s instructions)
- 1 Head of Broccoli (cut into florets and cooked)
Method
- Heat the oil in a saucepan, add onion and fry for 3 minutes.
- Stir in mushrooms, pepper and tomatoes. Simmer for 10 minutes.
- Add the mackerel to the pan and, simmer for 5 minutes. Pour the sauce over the cooked pasta.
- Serve with broccoli.
