Ingredients (serves 4)
- 1 Onion (peeled and chopped)
- 2 Cloves of Garlic (peeled and chopped)
- 1 Red Pepper (washed, de-seeded and chopped)
- 2 Sticks of Celery (washed and chopped)
- 1 x 400g Tin of Chopped Tomatoes or Passata
- 1 Teasp Chilli
- 1 Teasp Coriander
- 125g Mushrooms (washed and sliced)
- 400g Turkey (cut into strips)
- 200g Long Grain Rice (boiled)
- 1 Head of Broccoli (cut into florets and steamed)
- 4 Carrots (peeled and cooked)
Method
- Place all ingredients, except rice, broccoli and carrots in a large saucepan and cook gently until turkey is tender – about 30 minutes.
- Serve with rice, broccoli and carrots.
- Experiment with other meats or fish or even vegetables
- Alternatively serve with pasta or potatoes with seasonal vegetables
