Turkey and Mushroom Creole

Ingredients (serves 4)

  • 1 Onion (peeled and chopped)
  • 2 Cloves of Garlic (peeled and chopped)
  • 1 Red Pepper (washed, de-seeded and chopped)
  • 2 Sticks of Celery (washed and chopped)
  • 1 x 400g Tin of Chopped Tomatoes or Passata
  • 1 Teasp Chilli
  • 1 Teasp Coriander
  • 125g Mushrooms (washed and sliced)
  • 400g Turkey (cut into strips)
  • 200g Long Grain Rice (boiled)
  • 1 Head of Broccoli (cut into florets and steamed)
  • 4 Carrots (peeled and cooked)

Method

  1. Place all ingredients, except rice, broccoli and carrots in a large saucepan and cook gently until turkey is tender – about 30 minutes.
  2. Serve with rice, broccoli and carrots.
  • Experiment with other meats or fish or even vegetables
  • Alternatively serve with pasta or potatoes with seasonal vegetables
