Coronation Chicken with Rice

Ingredients (serves 1)

  • 150g Water
  • 120g Chicken
  • 6g Curry powder
  • 44g Mayonnaise
  • 9g Lemon Juice
  • 15g Mango Chutney
  • 18g Sultanas
  • 60g Basmati rice

Method

Pre-heat oven to 180C / 350F / Gas Mark 4

  1. Drizzle chicken with oil, place on baking tray and cook in the oven for 25 minutes
  2. Rinse rice in a sieve with cold water to remove extra starch, add rice to a pan with 150ml water (2 X volume of rice) add a pinch of salt, bring to boil then reduce heat and cook for 10-12 minutes
  3. While chicken and rice are cooking in a bowl mix the mayonnaise, curry powder, mango chutney and lemon juice
  4. Once chicken is cooked, roughly chop into small pieces
  5. Add chicken into the sauce mix followed by the sultanas and mix
  6. Drain the rice and serve with the chicken

Suggestions

Use chickpeas to create a cheaper or vegetarian option

To reduce fat, swap mayonnaise for low fat mayonnaise or low fat natural yoghurt
