

Ingredients (serves 1)
- 150g Water
- 120g Chicken
- 6g Curry powder
- 44g Mayonnaise
- 9g Lemon Juice
- 15g Mango Chutney
- 18g Sultanas
- 60g Basmati rice
Method
Pre-heat oven to 180C / 350F / Gas Mark 4
- Drizzle chicken with oil, place on baking tray and cook in the oven for 25 minutes
- Rinse rice in a sieve with cold water to remove extra starch, add rice to a pan with 150ml water (2 X volume of rice) add a pinch of salt, bring to boil then reduce heat and cook for 10-12 minutes
- While chicken and rice are cooking in a bowl mix the mayonnaise, curry powder, mango chutney and lemon juice
- Once chicken is cooked, roughly chop into small pieces
- Add chicken into the sauce mix followed by the sultanas and mix
- Drain the rice and serve with the chicken
Suggestions
Use chickpeas to create a cheaper or vegetarian option
To reduce fat, swap mayonnaise for low fat mayonnaise or low fat natural yoghurt
