

Ingredients (serves 4)
- 2 Carrots (peeled and chopped)
- 1 Onion (peeled and chopped)
- 1 Clove of Garlic (peeled and chopped)
- 2 Tomatoes (washed and chopped)
- 2 Celery Sticks (washed and chopped)
- 600ml Boiling Water with 1 Vegetable Stock Cube
- 300ml Fresh Orange Juice
- 3 Tablsp Fresh Coriander (chopped)
- Pinch of Black Pepper
Method
- Place all ingredients except fresh coriander and black pepper in a large pan.
- Simmer for 20-25 minutes.
- Add coriander.
- Puree or mash soup.
- Season with black pepper. Garnish with additional coriander and serve.
The orange juice may be substituted for stock
