Ingredients (serves 2)
- 1 Teasp Olive Oil
- 1 Red pepper (washed, de-seeded and cut into strips)
- 1 Medium Onion (peeled and chopped)
- 1 x 400g Tin of Chopped Tomatoes or Passata
- Pinch of Sugar
- ½ Teasp Paprika
- 1 x 210g Tin of Butter Beans (drained)
- 1 Egg (beaten)
- ½ Lettuce (washed and shredded)
- 2 Tomatoes (washed and sliced)
- ½ Cucumber (washed and sliced)
Method
- Pre-heat the grill
- Heat the oil in a non-stick frying pan and cook the pepper and onion until softened, add the tomatoes, sugar and paprika, simmer for 10 minutes, uncovered.
- Add the butter beans and the egg.
- Arrange in an oven-proof dish and grill for approx 10 minutes or until set.
- Serve with prepared side salad.
