

Ingredients (serves 4)
- 1 French Stick or Ciabatta Bread
- 2 Cloves of Garlic (peeled and chopped)
- 3 Tablsp Olive Oil
- 4 Tomatoes (chopped)
- 1 Red Onion (peeled and chopped)
- 1 Dessertsp Basil Leaves (torn)
Method
- Cut the bread length wise, then into pieces about 10cm long.
- Combine half the garlic with the olive oil and brush the inside of the bread.
- Pre-heat the grill and toast the bread lightly on both sides.
- Combine the remaining ingredients and spoon on to the garlic oil side of the bread.
- Serve immediately.
Serve as a Starter or with a range of salad for a main meal
