Cajun Chicken Pasta

Ingredients (serves 1)

  • 40g Green beans
  • 15g Cajun spice
  • 15g Cheddar Cheese
  • 120g Chicken
  • 35g Low Fat Creme Fraiche
  • 3g Garlic
  • 1 Chicken Stock Cube
  • 75g Pasta
  • 250g Passata
  • 20g Spinach
  • 2.5g Sugar

Method

  1. Boil a 750ml pan of water with a pinch of salt, once boiling add pasta and stir, cook for 12 minutes
  2. Cut chicken into small chunks, use another chopping board to trim green beans and cut them into thirds, peel and grate / finely chop the garlic
  3. Heat a drizzle of oil in a frying pan, add chicken and green beans season with salt and pepper and cook until chicken is browned roughly 5-7 minutes
  4. Add garlic and Cajun to the chicken fry for 1 minute then add the passata, chicken stock cube and sugar, bring to boil then lower heat and simmer until thickened
  5. Add the crème fraiche and cheese, stir then add in the spinach to wilt 1-2 minutes
  6. Drain the pasta and serve with the chicken
