Ingredients (serves 1)
- 40g Green beans
- 15g Cajun spice
- 15g Cheddar Cheese
- 120g Chicken
- 35g Low Fat Creme Fraiche
- 3g Garlic
- 1 Chicken Stock Cube
- 75g Pasta
- 250g Passata
- 20g Spinach
- 2.5g Sugar
Method
- Boil a 750ml pan of water with a pinch of salt, once boiling add pasta and stir, cook for 12 minutes
- Cut chicken into small chunks, use another chopping board to trim green beans and cut them into thirds, peel and grate / finely chop the garlic
- Heat a drizzle of oil in a frying pan, add chicken and green beans season with salt and pepper and cook until chicken is browned roughly 5-7 minutes
- Add garlic and Cajun to the chicken fry for 1 minute then add the passata, chicken stock cube and sugar, bring to boil then lower heat and simmer until thickened
- Add the crème fraiche and cheese, stir then add in the spinach to wilt 1-2 minutes
- Drain the pasta and serve with the chicken
