

Ingredients (serves 2)
- 1/3 Teasp Cumin
- 1/3 Teasp Coriander
- 1 Tablsp Fresh Mint (chopped)
- 125g Lean Minced Beef 1 Pepper (de-seeded and chopped)
- 1 Courgette (sliced)
- 1 Tablsp Sunflower Oil
- 100g Long Grain Rice (boiled)
Method
Pre-heat the grill
- Combine cumin, coriander, mint and mince in a bowl. You may wish to leave this to marinade to allow the flavours to develop.
- Thread pepper, courgette and small pieces of mince mixture onto skewers.
- Brush with oil.
- Grill for approx 20 minutes turning to prevent over cooking.
- Serve with boiled rice.
Alternatively serve with salad, pitta breaks and salsa
