Keema Curry

Ingredients (serves 2)

  • 125g Lean Minced Beef
  • 1 Onion (peeled and chopped)
  • 1 Clove of Garlic (peeled and crushed)
  • 2.5cm Piece of Fresh Ginger (peeled and chopped finely)
  • 1 Tablesp Medium Curry Powder
  • 1 x 400g Tin of Chopped Tomatoes
  • 50g Frozen Peas
  • 100ml Water
  • 100g Long Grain rice (boiled)

Method

  1. In a saucepan brown the mince, add the onion, garlic and ginger cook for a couple of minutes.
  2. Add the curry powder and cook for 1 minute more.
  3. Add the remaining ingredients, except the rice.
  4. Cover and simmer for 15 minutes before serving with rice.
  • Additional vegetables may be added at Stage 3 e.g. peppers, courgettes, mushrooms etc.
  • For a sweeter curry add mango chutney
  • For a hotter curry add chilli – fresh or powdered
