

Ingredients (serves 4)
- 1 Tablsp Sunflower Oil
- 350g Chicken Breast Meat (sliced)
- 1 Teasp Cajun Spice
- 2 Cloves of Garlic (peeled and chopped)
- 1 Onion (peeled and sliced)
- 2 Peppers (washed, de-seeded and sliced)
- 8 x 64g (medium) Tortillas
Method
- Heat the oil in a wok or large frying pan, add the chicken, spice and garlic and stir fry for about 5 minutes.
- Add the onion and peppers and cook for a further 3 minutes.
- Warm tortillas in the oven or microwave and serve with chicken mixture.
Accompaniments may include guacamole, tomato salsa and cool mint yoghurt dip
