

Ingredients (serves 4)
- ½ Lettuce (washed)
- 1 x 160g Tin of Tuna in Brine (drained)
- 1 Green Pepper (de-seeded and chopped)
- 1 Onion (peeled and sliced)
- 2 Tomatoes (washed and cut into quarters)
- 2 Eggs (hard boiled, peeled and cut into quarters)
- 75g Green Beans (cooked)
- 4 Tablsp French Dressing or (1 Tablsp vinegar, 3 Tablsp olive oil, ½ Teasp mustard mixed together)
- Pinch of Black Pepper
Method
- Arrange the lettuce on a serving plate or individual bowls.
- Combine all the ingredients together.
- Spoon on to the lettuce leaves and serve.
For a more filling meal serve with crusty bread
