Salad Nicoise

Ingredients (serves 4)

  • ½ Lettuce (washed)
  • 1 x 160g Tin of Tuna in Brine (drained)
  • 1 Green Pepper (de-seeded and chopped)
  • 1 Onion (peeled and sliced)
  • 2 Tomatoes (washed and cut into quarters)
  • 2 Eggs (hard boiled, peeled and cut into quarters)
  • 75g Green Beans (cooked)
  • 4 Tablsp French Dressing or (1 Tablsp vinegar, 3 Tablsp olive oil, ½ Teasp mustard mixed together)
  • Pinch of Black Pepper

Method

  1. Arrange the lettuce on a serving plate or individual bowls.
  2. Combine all the ingredients together.
  3. Spoon on to the lettuce leaves and serve.

For a more filling meal serve with crusty bread
