Hummus

Ingredients (serves 4)

  • 1 Tablsp Olive Oil
  • 2 Cloves of Garlic (peeled and chopped)
  • 1 Red Chilli (de-seeded and chopped)
  • 1 Large Tin (400g) of Chickpeas (drained and rinsed)
  • ½ Lemon (zest and juice)
  • 1 Tablsp Peanut Butter
  • 1 Tablsp Low Fat Natural Yoghurt
  • 1 Teasp Ground Coriander Black Pepper

Method

  1. Place all ingredients in a bowl and blend.
  2. Season with black pepper to taste.
  3. Serve chilled.

Serve with crudities – strips of carrots, cucumber, celery, peppers etc. for a tasty alternative to crisps and dips
