

Ingredients (serves 4)
- 1 Dessertsp Vegetable Oil
- 5 Mushrooms (washed and sliced)
- 1 Onion (peeled and chopped)
- 2 Eggs (whisked)
- 200g Long Grain Rice (cooked)
- 4 Tablsp Frozen Garden Peas
- 1 Tablsp Soy Sauce
- Pinch of Black Pepper
Method
- Heat the oil in a large saucepan and fry the mushrooms and onion until soft, push the mixture to one side of the pan.
- Stir in eggs to the clear side of the pan and cook till set. Add rice and peas and mix together, fry for 2 minutes.
- Add soy sauce and season with black pepper to taste
Serve as an accompaniment to Chinese / Asian dishes
