


Ingredients (serves 1)
- 120g Water
- 3g Garlic
- 10g Lemons
- 25g Lentils, red, split, dried, boiled in unsalted water
- 100g Italian Chopped Tomatoes
- 60g Onions
- 2.5g Paprika
- 60g Basmati rice
- 15g Spinach
- 2.5g Ground Cumin Jeera Powder
- 120g Skinless Chicken Fillets
Method
- Start rice, cook rice in water for 10-12 minutes, turn off heat, add lemon and fluff the rice
- Brown chicken, heat oil in a pan, cook chicken until lightly golden
- Add the onion and garlic to soften, stir in the spices
- Add lentils, water and tomatoes cover and simmer for 12-15 minutes until lentils are soft and sauce has thickened
- Add spinach to wilt
- Serve, add the rice to a plate, spoon the chicken and lentil mix on top
