Spiced Lentil Chicken and Lemon Rice

Ingredients (serves 1)

  • 120g Water
  • 3g Garlic
  • 10g Lemons
  • 25g Lentils, red, split, dried, boiled in unsalted water
  • 100g Italian Chopped Tomatoes
  • 60g Onions
  • 2.5g Paprika
  • 60g Basmati rice
  • 15g Spinach
  • 2.5g Ground Cumin Jeera Powder
  • 120g Skinless Chicken Fillets

Method

  1. Start rice, cook rice in water for 10-12 minutes, turn off heat, add lemon and fluff the rice
  2. Brown chicken, heat oil in a pan, cook chicken until lightly golden
  3. Add the onion and garlic to soften, stir in the spices
  4. Add lentils, water and tomatoes cover and simmer for 12-15 minutes until lentils are soft and sauce has thickened
  5. Add spinach to wilt
  6. Serve, add the rice to a plate, spoon the chicken and lentil mix on top
