


Ingredients (serves 1)
- 10 Mini Plain Tortillas
- 10g Lime Juice from Concentrate
- 15g Cajun Spice
- 15g Grated Cheddar Cheese
- 3g Garlic
- 22g Mayonnaise
- 6.3g Olive Oil
- 30g Onions
- 5.9g Chicken Stock Cube
- 120g 5% Fat Pork Mince
- 75g Little Gem Lettuce
- 2.5g Sugar
- 15g Tomato Puree
- 85g Tomatoes
Method
- Finely slice the onion
- Drizzle oil in a frying pan to heat then add the mince and onion, fry until brown roughly 5-7 minutes
- Add chopped garlic, Cajun spice, and tomato puree to the mince and stir for 1 minute
- Stir in stock paste, simmer until thickened 1-2 minutes
- Trim the lettuce, halve lengthways then thinly slice
- Chop tomato into small chunks
- Grate the cheese
- Add lime juice, sugar and olive oil into a bowl, season with salt and pepper and mix then add the tomato chunks
- Heat tortillas in the microwave for 30 seconds 10. To make your tacos, spread mayonnaise on base of the tortillas, add lettuce, mince, then the tomato salsa, finish with cheese then fold the taco
Suggestions
For a vegetarian option use Quorn mince or drained lentils / mixed beans
Swapping out mince for tinned pulses will also reduce the cost
To reach your 5 a day, extra vegetables such as peppers or sweetcorn can be added
