Vegan Mac & Cheese

Ingredients (serves 1)

  • 15g Hot Smoked Paprika
  • 33g Carrots
  • 27g Cashew Nuts
  • 30g Grated Dairy Free Cheese
  • 3g Garlic
  • 67g Macaroni
  • 5g Lemon Juice
  • 4g Dijon Mustard
  • 7g Nutritional Yeast Flakes with B12
  • 15g Olive Oil
  • 1.8g Cayenne pepper
  • 2.5g White Wine Vinegar
  • 117g Fresh Peeled Potatoes

Method

  1. Soak the cashews in hot water for 15 minutes
  2. Peel carrot and potatoes, cut into small chunks and boil until soft
  3. Drain the cashews, add cashews, carrot, potatoes, 10ml oil, nutritional yeast, lemon juice, garlic clove, Dijon mustard, white wine vinegar, cayenne pepper, grated cheese and smoked paprika to food processor, blend until smooth
  4. Cook the macaroni as per packet instructions, drain then add the sauce and serve

Suggestions

If you do not have a food processor a hand blender can also be used

Use gluten free pasta if required
